3. Swiss Water Process (SWP)

Renowned for its natural approach, the Swiss Water Process uses water and green coffee extract to remove caffeine. The process involves soaking the beans to displace caffeine molecules, followed by filtration through carbon filters. SWP is celebrated for retaining coffee’s original flavor compounds without the use of chemical solvents, making it a favorite among specialty coffee enthusiasts.

4. Mountain Water Process

Similar to SWP but conducted in Veracruz, Mexico, the Mountain Water Process utilizes fresh water from Pico de Orizaba. This method is favored for its environmental sustainability and ability to preserve coffee’s origin flavors, particularly in Mexican coffees decaffeinated at source.

5. CO2 Process

Widely used in Europe, the CO2 process involves exposing green coffee beans to high-pressure, liquid CO2. The gas draws out caffeine, which is then separated and returned to its gaseous state. This method is praised for its ability to maintain coffee’s natural flavor profile throughout the decaffeination process.
