Why Does Coffee Need to Be Roasted?

The degree of roast, or how long the beans are roasted, plays a significant role in determining the final flavor profile of the coffee.

Ever wonder why your coffee tastes so rich and flavorful? The secret lies in the roasting process! Coffee beans start as the seeds of the coffee fruit, and in their raw form, they have an acidic, grassy, and woody taste. Simply put, they taste yuck. Roasting the coffee beans to a specific temperature unlocks their full potential, releasing unique bitter, sweet, floral, and fruity flavors and aromas.

The Science of Coffee Roasting

Chemical Transformation

When coffee beans are roasted, they undergo a series of complex chemical changes. The beans heat up, their structure loosens, causing them to expand, and chemical reactions break down organic acids, carbohydrates, and proteins into simpler compounds. This transformation turns a relatively flavorless seed into a brown, aromatic, and flavorful bean.

Roasting Levels

The degree of roast, or how long the beans are roasted, plays a significant role in determining the final flavor profile of the coffee.

  • Dark Roast: Beans are roasted for a longer duration and at a higher temperature. This results in darker-colored beans with richer, more robust flavors often described as smoky, nutty, or chocolatey. Dark roasts are typically used for pressurised brewing methods such as espresso machines or stovetops and are often enjoyed with milk.
  • Light Roast: Beans are roasted for a shorter duration and at a lower temperature. They tend to have a brighter, more acidic flavor with subtle notes. Light roasts are usually preferred for beans with delicate flavors and are enjoyed using non-pressurized brewing methods like V60 or Chemex, meant to be appreciated on their own.

Roasting Coffee vs. Roasting Nuts

Roasting coffee and nuts share some similarities but also have significant differences. Both processes involve exposing the raw product to heat, which causes a chemical reaction that enhances flavors, colors, aromas, and textures. However, the key differences lie in the duration and level of control required.

  • Duration: Nuts usually take just a few minutes to roast, whereas coffee takes between 10 and 20 minutes to achieve the perfect roast.
  • Control: Roasting coffee requires a higher level of precision and control over factors like temperature, airflow, and roast level compared to nuts.

Can You Roast Coffee at Home?

Yes, you can roast your own coffee at home! Home coffee roasting is becoming increasingly popular among enthusiasts who want to experiment with different roasts and achieve a fresh, customized coffee flavor. Here are some tips to get started:

  • Equipment: You can use various roasting methods, from simple pans to dedicated home coffee roasters.
  • Trial and Error: Start with small batches of green coffee beans and experiment with different roasting times and temperatures to find the flavors and aromas you prefer.

Home Roasting Considerations

While roasting coffee at home can be fun and rewarding, it requires trial and error to get the roasts you like best. Remember to turn off your smoke alarm, as roasting can produce a lot of smoke!

Why Buy from Local Coffee Roasters?

While home roasting is an option, there are several reasons why you might want to buy from your local coffee roaster:

  • Quality: Local roasters typically source high-quality beans and offer a range of roast profiles and flavors that may be difficult to achieve at home.
  • Expertise: They can provide expert advice and recommendations on the best beans and roast profiles for your taste preferences. They also offer brewing tips to help you make the most of your coffee.
  • Support Local Business: Buying from local roasters supports small businesses and helps sustain the local economy.
  • Convenience: Purchasing from a local roaster is often more convenient than roasting at home, especially if you’re short on time or lack the necessary equipment.

What Defines One Coffee Roaster from Another?

Coffee roasting is about more than just the beans; it’s about the roasting process, equipment, and the roaster’s unique style and approach. At Society Coffee Roasters, here’s what sets us apart:

Roasting Style

We embrace the concept of omni-roast, roasting each origin to a specific profile that best showcases the potential of the coffee for the recommended brewing method. Our philosophy revolves around “Balance,” “Harmony,” and “Personality,” which we pride ourselves on when crafting flavorful coffee beans.

Bean Sourcing

The origin of coffee beans significantly impacts their flavor and aroma. David, our head roaster, has a passion for fruity and funky flavors, leading us to specialize in natural processing coffee. However, he also embraces high-quality coffee from various processes and origins.

Roasting Equipment

We use a small hot air roaster, the Ikawa Pro, for all our small pre-production sample roasting. This allows us to achieve a clean-tasting profile and understand the coffee’s potential. For day-to-day roasting, we use a 5kg Yangchia Taiwanese cast-iron drum roaster, achieving a good balance between flavor and texture.

Quality Control

We balance rigorous quality control with customer feedback. We taste our coffee daily and hold bi-weekly cupping events open to the public. This combination helps us create exceptional coffee that both we and our customers are proud of.

Marketing and Branding

We collaborate with local artists to create an image that represents Society Coffee Roasters, reflecting the characteristics of the coffee and the hard work of the coffee producers.

Appreciating the Magic of Roasting

The next time you take a sip of your favorite coffee, take a moment to appreciate the magic of roasting. It transforms a small, unassuming green seed into the rich, aromatic cup of brew that we all love. The final flavors are not only determined by the degree of roasting but also by the careful selection of beans and the unique roasting process of your local coffee roaster.

At Society Coffee Roasters, coffee is more than just another item on the shelf. It is a labor of love and brewed with passion. We’re determined to infuse every single cup and sip with that same fiery spirit. That way, all the progress and hard work we put into making speciality coffee truly matter.
