What Do You Mean Coffee Needs Processing?

Coffee is actually the seed of the coffee cherry—a fruit that grows on the coffee tree. What we drink is the roasted seed from that fruit. So yes, it’s true: coffee is produce, just like the fruit and veg you’d find in your garden.

Before it ever reaches your cup, coffee needs to be processed. This means removing the outer layers of the cherry to prepare the beans for roasting and brewing. These layers—like the pulp and mucilage—contain sugars, acids, and other compounds that can affect the flavour if they’re not handled properly. If left on too long, they can also attract bacteria and mould, which can lower the quality of the coffee.

Processing also separates the beans from the fruit, making them easier to dry and store. Once that’s done, the beans are ready to be roasted, which is where their unique flavours and aromas really start to develop.

Traditional Coffee Processing Methods

There are three main processing methods used by coffee producers. Each one has a noticeable impact on the final taste of your coffee. The method chosen often depends on things like climate, altitude, local traditions, and the kind of flavour profile the producer is aiming for.

Washed Process

With the washed process, coffee cherries are picked and put through a machine that removes the outer fruit layers, leaving just the beans. These beans are then fermented in water for a set period, which helps break down any remaining fruit. After that, they’re washed clean and left to dry.

This method usually produces a cleaner, brighter cup with higher acidity and a lighter body—great if you enjoy a crisp, refreshing coffee.

Honey Process

The honey process sits somewhere between washed and natural. The cherries are picked and partially stripped of their outer layers, but some of the fruit is left on the beans. They’re then dried with this sticky layer still attached, often on raised drying beds.

The result? A coffee that’s a bit more complex and sweet, with a medium body. You might hear terms like “white honey” (less fruit left on the bean) or “red honey” (more fruit left), which affect how sweet and full the coffee tastes.

Natural Process

In the natural process, the cherries are dried whole—usually in the sun or on raised beds—until the beans inside reach the right moisture level. Once dried, the outer layers are removed to reveal the green coffee beans.

This method often gives you a sweeter, fruitier cup with a fuller body and lower acidity. It’s a popular choice for those who enjoy bold, rich flavours.

Experimental Processing Methods

In recent years, producers have started experimenting with new processing techniques to push flavour even further. These methods are becoming more common, and they’re blurring the lines between the traditional styles.

Here are a few you might come across:

Extended Fermentation

This is a twist on the washed process, where the beans are fermented for longer—sometimes up to 72 hours. This extended time can create deeper, more complex flavours in the final cup.

Carbonic Maceration

In this method, whole coffee cherries are placed in a sealed container filled with carbon dioxide before processing. It’s a technique borrowed from winemaking and can result in fruity, wine-like flavours and aromas.

Natural Anaerobic Fermentation

Here, the cherries are sealed in a container without oxygen for a period before processing. This can produce unique and layered flavour profiles, often with fruity or floral notes.

Controlled Fermentation

With controlled fermentation, producers carefully manage things like temperature, humidity, and timing to bring out specific flavours in the coffee. It’s a more precise approach that allows for consistent and intentional results.

The Importance of Coffee Processing

Coffee processing plays a huge role in the quality and flavour of what ends up in your cup. The method used can completely change how a coffee tastes—from bright and citrusy to rich and fruity.

At the end of the day, it’s worth exploring different processing styles to see what you enjoy most. It’s all part of the journey—and one of the things that makes coffee so interesting.
