What You’ll Need

  • Siphon coffee maker: Specifically, the Hario TCA-5 model with a paper filter.
  • Siphon coffee filters
  • Freshly ground coffee: Aim for a medium grind, similar to beach sand.
  • Hot water: Approximately 560 mL at 205ºF (or preheated to achieve this temperature).
  • Heat source: Preferably a butane torch for precise control.
  • Cup
  • Additional equipment: Decanter, coffee grinder, hot water kettle, coffee scale, thermometer, stopwatch, stirring device (like a paddle).

Step-by-Step Guide to Siphon Coffee Brewing

Step 1: Preparation

  • Begin heating 560 mL of water to 205ºF. Preheating the water in a kettle can expedite this process compared to heating it directly in the siphon’s bottom chamber.

Step 2: Setup

  • Assemble the siphon by attaching the bottom globe to the butane burner and setting it to its highest setting.
  • Rinse the paper filter retainer and assembly under hot tap water to prepare the filter.

Step 3: Brewing Initiation

  • Once the water in the bottom chamber is heated (small bubbles but not yet boiling), place the top chamber securely over the bottom globe, ensuring a tight seal.
  • As the water rises into the top globe, reduce the heat significantly to maintain a brewing temperature close to 200ºF (93ºC). This temperature stability is crucial for achieving optimal extraction.

Step 4: Adding Coffee

  • Once the water has completely risen into the top chamber, add the ground coffee to the top chamber and start your timer.
  • Gently stir the coffee using a back-and-forth motion with a paddle to ensure all grounds are fully saturated. Allow a 30-second bloom before continuing.

Step 5: Brewing Process

  • After the initial bloom (around 30 seconds), turn off the butane burner completely and remove it from under the siphon.
  • Allow the coffee to draw down naturally, which typically takes about a minute and a half. Gentle stirring during this phase can help facilitate the process without agitating the grounds excessively.

Step 6: Enjoying Your Brew

  • Once the drawdown is complete, carefully remove the top chamber and set it aside.
  • Serve the brewed coffee immediately into your cup or decanter to enjoy at its freshest and most flavorful state.
