Their findings were part of a larger study initially focused on brew temperatures, which unexpectedly highlighted the importance of drinking temperatures.
Dr. William Ristenpart explained that the study aimed to understand consumer preferences better. The researchers controlled the brewing process to ensure consistent Total Dissolved Solids (TDS) and extraction yield, but serving temperatures varied naturally, providing additional data on preferred drinking temperatures.

As coffee cools, its characteristics evolve. World Brewers Cup champion Sherry Hsu notes that drinking coffee between 65°C and room temperature allows you to experience the richest aroma and flavor without scalding your tongue. She explains that acidity, a desirable trait that makes coffee lively and dynamic, increases as the temperature decreases.
Seasonal and Personal Preferences
Temperature preferences can be influenced by personal taste and seasonal changes. Older customers often prefer hotter coffee, while all customers tend to favor warmer drinks in colder months. Experimenting with different temperatures can reveal new dimensions of your favorite coffee.
